WINEMAKING NOTES:
Old soul cabernet has hints of Black Cherry, Licorice and Black Pepper all wrapped together with a dash of Vanilla. In this wine you will find purity and elegance, red berry fruit, Black Cherry, Licorice and Black Pepper all wrapped together with hints of Vanilla notes. Delicate tannins dance on the pallette with subtle oak spice tones that lend to a layered complexity with intriguing finesse.
FERMENTATION/AGING:
Created with a more delicate approach of winemaking, it is the grapes that are the star with minimal intervention. Crafted using new world wine making methods, the individual lots are aged separately with 8 months to 15 months on oak and then blended to sustain the varietal characteristics of the Cabernet Sauvignon grape.
