Founded more than a decade ago by California surfer Rodney “Rod” Cegelski, and Aussie Hamish “Hammer” Marshall, Rod & Hammer's Slo Stills crafts American spirits. The story of Slo Stills began in 1988 at the Slo Brew brewery. In 2012 they distilled and aged their first whiskey, a rye beer mash made in the original Garden street copper kettle. They realize that the most important ingredient and the crucial part of distilling is time ― hence the name. Their other not-so-secret ingredient is purified oceanic water, as every spirit of theirs is cut with Pacific Ocean water. "California meets Australia," as they say.
Dried & malted grains are milled, exposing the starches within. Then they add water, cooking the mash in order to convert those starches to sugars. Yeast is then added to the wort in fermenting tanks, starting the fermentation process that converts the sugars to alcohol, and turns the wort into beer. This beer is then distilled. The resultant spirit is then transferred to charred new American Oak barrels, where it matures from 6 months to 2 years or more. Before bottling the spirit is filtered and brought to proof with purified oceanic water.
Rod & Hammer's Slo Stills Straight Rye Whiskey features a mash bill of 95% rye grain. Aged 2 years in new American white oak, the expression is bottled at 90 proof. It's a bold spirit with a rich honey color that has notes of black pepper, cedar, caramel, hints of smoke, and plenty of that warm rye spice.
